I was told that chopping vegetables and fruits would be easier with a Santoku knife. For $25 I gave it a shot.
A Santoku is an eastern general purpose cooking knife, roughly equivalent to the western chef’s knife. The sheep’s foot tip on a Santoku greatly reduces the amount of roll the knife has while chopping, each stroke has to be a bit more deliberate. The fast rocking back and forth of a chef’s knife becomes a more precise and controlled motion.
Onions and garlic look at little cleaner when chopped with my santoku, but it takes more time. The long cultivated see-saw action of chef’s knife needs to be relearned if I’m truly to take advantage of the santoku.
This $25 Santoku is just fine by me. I’ll keep working with it.
